Makes 1 drink · about 3 min to make
Ingredients
- Cask ale one imperial pint, at 11–13°C 19¼ oz
Ounces are US fluid ounces (29.57 ml), rounded.
Method
- Start with a perfectly clean glass.
- With a sparkler: touch the sparkler to the bottom of the upright glass and fill to about two-thirds with a strong first pull and steady, consistent pulls (Timothy Taylor's method).
- Let the beer settle for a full minute.
- Top up with the sparkler below the head, finishing with a tight head of about 1 cm.
- Without a sparkler (common in the South): hold the glass at about 45°, keep the spout out of the beer, and straighten the glass as it fills.
