About the Clover Club

Raspberry syrup and lemon give the Clover Club a tart, fruity edge, and a few drops of egg white create its soft foam. It is a good introduction to egg-white sours.

Background

The egg white acts as an emulsifier, forming the drink's characteristic foamy head.
