About the Green tea

Green tea is steamed or pan-fired soon after picking so the leaf doesn't oxidise, which keeps its fresh, grassy flavour. Boiling water makes it taste bitter, so the UK Tea & Infusions Association recommends water at around 80°C.

Brewing times differ by tea: about 2–2½ minutes for Japanese sencha, 2–3 for jasmine and 3–4 for Chinese gunpowder. All are drunk without milk.
