About the Caipirinha

Muddle gently: you want the juice and some oils from the lime, not a bitter pith-heavy mash. Cachaça, a Brazilian sugar-cane spirit, gives a grassy, funky backbone.

The IBA lists variations made with vodka (Caipiroska), rum (Caipirissima) and Licor Beirão (Caipirão).

Background

The Caipirinha is a Brazilian cocktail that originated in the state of São Paulo.
