About the Daiquiri

The Daiquiri is the template for the rum sour: sharp lime, clean white rum and just enough sweetness to round the edges. With so few ingredients there is nowhere to hide, so use freshly squeezed lime juice and measure carefully.

The IBA specification dissolves superfine (caster) sugar in the shaker before the ice goes in, which gives a silkier texture than sugar syrup.
