Ingredients

  • Blended Scotch whisky2 oz
  • Islay single malt Scotch whisky IBA specifies Lagavulin 16¼ oz
  • Fresh lemon juice¾ oz
  • Honey syrup¾ oz
  • Fresh ginger 2–3 quarter-sized slices2 slices

Garnish: Candied ginger slices

Method

  1. Muddle the fresh ginger in a shaker.
  2. Add the remaining ingredients except the Islay whisky.
  3. Fill the shaker with ice and shake.
  4. Fine-strain into a chilled old fashioned glass with ice.
  5. Float the Islay whisky on top and garnish with candied ginger.
