No. 001 · Beer

A pint of cask ale

Nonic pint glass (or the brewery's own glass) · Poured · 3 min · serves 1

Ingredients

  • Cask ale one imperial pint, at 11–13°C568 ml

Method

  1. Start with a perfectly clean glass.
  2. With a sparkler: touch the sparkler to the bottom of the upright glass and fill to about two-thirds with a strong first pull and steady, consistent pulls (Timothy Taylor's method).
  3. Let the beer settle for a full minute.
  4. Top up with the sparkler below the head, finishing with a tight head of about 1 cm.
  5. Without a sparkler (common in the South): hold the glass at about 45°, keep the spout out of the beer, and straighten the glass as it fills.
